Ryan Steiner's Famous Vegan Cabbage & Beer soup

Ryan is famous with friends, family and now runners for his cooking skills at developing this delicious soup! Ryan’s Mother in law shared with us, “Ryan should open a restaurant solely based on this soup!” After eating this soup, we agree!

Ryan cooked up huge batches to share at the 2022 Frozen Gnome 10k/50k. Runners warmed up with a hot bowl after the race and raved at how yummy it was. Our facebook page quickly filled up with folks wanting the recipe.

This is a delicious, spicy, rich flavored veggie soup. You don’t need to be a Vegan to enjoy! Thank you Ryan for sharing!

-3 to 4 cups cabbage (I like to use a mix of purple and green but any works I just like it colorful.)

- 2 cups diced potato’s

- Large onion diced

- 1-5 whole jalapeño peppers diced depending how much spice you like

- 1 bell pepper diced

- I can of diced tomatoes

- 14 oz impossible ground sausage

- 24-32 oz of beer (I used bud light but a dark stout does bring this up to a whole other level)

- 1 cup of sugar or equivalent (I have even used Splenda and it’s still amazing)

- Salt and pepper to your preference

- Always sriracha liberally

Cook sausage, onions, and peppers in soup pot until sausage is cooked and onions are translucent. Add the rest of the ingredients and beer to pot. Boil until potato’s and cabbage are tender. Freaking enjoy this with some beer bread if you’re not watching your carbs like this guy!!
